Protein Packed Trifle – Boost Your Leftovers With Whey Protein

Indulge yourself with a good conscience. Overripe fruits or berries don’t belong in the trash can, instead, turn them into an easy and tasty trifle – boosted with whey protein for extra nutrition. In this lovely dessert you can use almost any fruits, stone fruits or berries you have. So go ahead and experiment.

We are using vanilla whey protein to add extra taste and sweetness to the compote. But depending on the fruits or berries you are using, you can try out different flavours – or simply a neutrally tasting variant.

Ingredients

750 g fruit of your choice (most fruits, stone fruits or berries can be used)

A little water – adjust the amount according to the fruit

2 scoops of vanilla whey protein

50 g ladyfingers (or other cake or biscuits)

300 g sour cream 38% fat

A little freeze-dried raspberries

Tips
Try to substitute the water with orange or lemon juice to add extra taste notes to your compote. If you want a sweeter trifle, you can also add a tablespoon of liquid honey.

Method

1. Clean and prepare your fruits or berries and cut them into small cubes.

2. Place the fruit in a large saucepan with a little bit of water (adjust the amount to the fruit). Simmer until the fruit is tender.

3. Poor the compote into a bowl and let it cool down a bit.

4. Stir the whey protein into the compote 1 scoop at a time. Mix well in between until the whey protein has dissolved completely.

5. Cool down the compote in the fridge.

6. Layer the fruit compote and crushed ladyfingers (or whatever biscuits or cake you have in your kitchen cabinets).

7. Top with sour cream and a sprinkle of freeze-dried raspberries.
