Protein Mayonnaise With Asparagus

Who can resist a light and creamy, low-fat alternative to mayonnaise? Discover this delicious whey protein-based mayonnaise with wild garlic.

It’s a perfect substitute for traditional mayonnaise and pairs beautifully with a variety of dishes. We recommend trying it with fresh asparagus and a few slices of high-quality Parma ham for a flavour-packed, healthy treat on a bright spring day.

Ingredients

1 dl chickpea water

100 g neutral whey protein

0.75 dl rapeseed oil

2 tsp mustard

20 ml lemon juice

0.5 tsp salt

A handful of wild garlic, finely chopped

To Serve

1 bunch of fresh green asparagus

Sliced Parma ham

Method

  1. Place the whey protein and chickpea water in a bowl and whisk with a hand mixer on the highest setting for about 3 minutes.
  2. Add the rapeseed oil, mustard, lemon juice and salt, mixing at medium speed until the mayonnaise reaches the desired thickness.
  3. Gently fold in the chopped wild garlic a little at a time. Taste to find the amount that suits your palette.

Try serving the mayonnaise with freshly boiled asparagus wrapped in Parma ham for a delicious and elegant dish.

  1. Snap off the tough ends of the asparagus.
  2. Bring a pan of lightly salted water to the boil. Carefully lower the green asparagus into the water and boil for 20–30 seconds.
  3. Leave the asparagus to cool and then serve wrapped in a slice of Parma ham with a spoonful of whey mayonnaise and fried chick peas.
