1 dl chickpea water
100 g neutral whey protein
0.75 dl rapeseed oil
2 tsp mustard
20 ml lemon juice
0.5 tsp salt
A handful of wild garlic, finely chopped
To Serve
1 bunch of fresh green asparagus
Sliced Parma ham
Method
- Place the whey protein and chickpea water in a bowl and whisk with a hand mixer on the highest setting for about 3 minutes.
- Add the rapeseed oil, mustard, lemon juice and salt, mixing at medium speed until the mayonnaise reaches the desired thickness.
- Gently fold in the chopped wild garlic a little at a time. Taste to find the amount that suits your palette.
Try serving the mayonnaise with freshly boiled asparagus wrapped in Parma ham for a delicious and elegant dish.
- Snap off the tough ends of the asparagus.
- Bring a pan of lightly salted water to the boil. Carefully lower the green asparagus into the water and boil for 20–30 seconds.
- Leave the asparagus to cool and then serve wrapped in a slice of Parma ham with a spoonful of whey mayonnaise and fried chick peas.
